Electrophoretic origin determination in food analysisV. Examination of polyacriylamide gel (pag)-disc electrophoresis of the aqueous ethanol-soluble proteins (gliadin) of some hard wheat varieties and macoroni samples

The gliadin proteins of the most cultivated 6 durum wheat varieties in Turkey has been examined by polyacrylamide gel disc electrophoresis. The obtained electrophoregrams allow to the identification of these varieties. The method was also applied to the 9 different samples of macaroni and it was observed that the obtained electrophoregrams can be used for the identification of the soft wheat in this products.
